What to eat when the power is out? Forget convenience foods.

One of the most difficult times comes when I am unable to cook meals for myself. Breakfast cereals, cans of soup, and noodles-in-a-cup are never okay for me to eat. You guessed it -- they all have gluten in them. To stay healthy, I have to be able to cook my food from scratch. Hearty meals of meat and veggies are what I live on day in and day out, three meals a day. (Admittedly, it isn't a bad way to eat!)

When Hurricane Irene knocked our power out, I couldn't live off a diet of prepackaged snacks and convenience foods. And emergency dehydrated meals were off limits for me, too. Almost all of those things contain gluten. I had to be able to cook myself meals from scratch, or I'd be going hungry until the power came back on.
